Growing up, I hated breakfast. I would always be running late in the morning with no time to eat breakfast before school. Banana slices with peanut butter was a common “meal” that I would scarf down before running out the door, and there were many times my mom just shoved two Milano cookies in my hand before getting into carpool… (not a proud family moment, but I needed to eat something, right?!)
Years later, I’m older and clearly, so much wiser at the age of 21 (yeah, right), and know the importance of eating a hearty, well-balanced breakfast to carry me through my day. But old habits never truly die, and there are many mornings where I’m still pushing my limits and only leaving myself a few minutes for the most important meal of the day! Something I’ve found to be fast, easy, and so fricken’ good is toast! And I’m not talking butter on bread, I’m talking about elaborate, decorative, gourmet breakfast toasts – that only take a few minutes and a few ingredients! I rounded up some of my favorite toast recipes that are perfect for a quick bite in the morning – check them out!
Avocado Toast with Feta and Pomegranate. The first breakfast toast had to be avocado toast – I mean what is more perfect than that?? Slice 1/4 to 1/2 of an avocado into long slivers, and lay them flat onto your toast. Then, crumble some feta cheese on top (protein!!), and decoratively place pomegranate seeds on top. Finally, drizzle some olive oil on top of it all, and I like to add a pinch of salt for flavor, too, and you’re done!
Banana with Almond Butter and Chia Seeds. Spread some almond butter on your piece of toast and layer slices of banana on top. Finally, sprinkle some chia seeds on top for extra flavor, and you’re done! This new take on my old “banana and peanut butter” breakfast is perfect for when I’m craving that nutty-butter flavor.
Bagel Toast. For me, a “bagel” always means cream cheese, lox, tomato – along with some other veggies for variation. So why not put it on toast?! Layer cream cheese onto your piece of toast, then add smoked salmon, some layers of cucumber, and top it off with scallions!
Strawberries, Goat Cheese, Edamame, Balsamic, and Salt. If you’re a cheese lover, this is for you. Coat some strawberries in balsamic vinegar in a bowl, and then spread some goat cheese on your toast. Layer the balsamic-infused strawberries and edamame on your toast and finish with some salt on top. Yum!
Kale, Eggs, and Cheddar Cheese. If you need eggs in the morning, this one is for you. Cook some kale on the stove until it’s tender. Then, beat one egg and cook it in the pan into an omelette. Once it’s done, fold it into quarters. Layer the kale on your toast, followed by your omelette, and top with some grated cheddar cheese. Place it back on the pan, and cover it for 30 seconds to get the cheese to melt, and you’re done! So simple, and so good.
