4 Inflammation-Fighting Crockpot Recipes You Should Make This Week For A Healthier Gut And Weight Loss

We spoke with Emily Johnson, RD, nutritionist, to learn about four inflammation-fighting crockpot recipes to make for a healthier gut and weight loss. Johnson revealed that turmeric chicken and vegetables, lentil and spinach stew, beef and sweet potato stew, and spicy tomato and white bean soup are the best options to start making this week!

Turmeric Chicken and Vegetables

Turmeric, a key ingredient renowned for its active compound curcumin, takes center stage as a potent anti-inflammatory agent. This vibrant spice not only combats inflammation but also contributes to a healthier gut by promoting the growth of beneficial bacteria. The addition of lean chicken and an array of colorful vegetables not only makes this crockpot creation a feast for the senses but also supports weight loss goals by providing a protein-rich and nutrient-dense meal.

"Turmeric and ginger are powerful anti-inflammatory agents. Lean chicken provides protein without excessive calories," Johnson says.

Ingredients: Chicken, turmeric, ginger, garlic, vegetables like carrots and broccoli.

Instructions: Add chicken, chopped vegetables, turmeric, ginger, garlic, and a cup of chicken broth to the crockpot. Cook on low for 6-8 hours.

Lentil and Spinach Stew

Lentils, rich in fiber and plant-based protein, provide a satisfying foundation while spinach infuses the stew with essential vitamins and minerals. This hearty concoction not only pleases the palate but also aligns with health goals by addressing inflammation through the natural anti-inflammatory properties present in these ingredients. "Lentils are high in fiber, aiding digestion and weight loss. Spinach is nutrient-dense but low in calories," says Johnson.

Ingredients: Lentils, spinach, tomatoes, onions, garlic, and herbs.

Instructions: Combine all ingredients in the crockpot with water or vegetable broth. Cook on low for 8 hours.

Beef and Sweet Potato Stew

The inclusion of lean beef provides a protein boost, while sweet potatoes contribute complex carbohydrates and essential nutrients. The stew's anti-inflammatory potential is elevated by ingredients like sweet potatoes, known for their anti-inflammatory properties. Ingredients: Lean beef, sweet potatoes, bell peppers, onions, garlic.

Instructions: Brown the beef, then add to the crockpot with other ingredients and broth. Cook on low for 7-8 hours.

Spicy Tomato and White Bean Soup

Bursting with the goodness of tomatoes and white beans, this soup harnesses the anti-inflammatory prowess of these ingredients. Tomatoes, rich in antioxidants, contribute to the reduction of inflammation, while the fiber-packed white beans support a healthy gut by nourishing beneficial bacteria.
