Need some new recipes to make to help you stay track with your weight loss? Fitness experts say there’s no better protein to have than chicken. “As far as lean proteins go, chicken takes top honors in protein amount, accessibility, and simplicity. As it works in just about every dish, chicken is easy to prepare in a healthy way by grilling, roasting, sautéing, poaching, stir-frying and baking,” Alex Caspero, R.D., tells Women’s Health

Here are some easy and metabolism-boosting chicken Crock-Pot recipes you should test out this week:

Slow Cooker Teriyaki Chicken, Quinoa, and Veggies




1 pound of boneless skinless chicken breasts
1 cup quinoa
2 cups beef or chicken broth
1/4 cup honey
1/4 cup white sugar
1/3 cup + 2 tablespoons soy sauce low sodium
4 tablespoons rice vinegar
teaspoon Heaping 1/4 ground ginger
3/4 teaspoon minced garlic
1/8 teaspoon pepper
2 large peppers I used green and red
1 ounce can pineapple chunks 20
1 tablespoon cornstarch + 1 tablespoon water optional


Skinny Lemon Chicken 




3 tablespoons coconut oil
4 chicken breasts, cubed
2 cloves garlic, finely chopped
1 teaspoon sea salt
2 cups vegetable broth
3 lemons, juiced and zested
1 tablespoon lite soy sauce
1 tablespoon cornstarch
4 tablespoons honey
1/2 teaspoon poppy seeds
1/2 teaspoon sesame seeds
1/4 cup green onions, diced

Slow Cooker Spicy Chicken Curry



For the Curry: 

1 tbsp vegetable oil
1 large onion peeled and chopped
3 chicken breasts boneless and skinless diced
3 cloves garlic peeled and minced
1 large piece of ginger about the size of your thumb, peeled and finely chopped
1 tsp salt
½ tsp ground black pepper
3 tsp hot chilli powder use less or mild chilli if you don’t like your curry too hot
1 tbsp ground coriander
½ tbsp cumin
1 tbsp curry powder
1 tsp paprika
1 tsp cinnamon
240 ml chicken stock (water plus a stock cube - or bouillon for gluten free - is fine)
400 g tinned chopped tomatoes
2 tbsp tomato puree/paste
2 tsp sugar this is to counteract the acidity in the tomatoes
400 ml can full-fat coconut milk


To Serve:
Rice, chopped coriander (cilantro) and finely chopped chillies

Honey Garlic Chicken




4 boneless, skinless chicken breasts
1 pound red potatoes, halved
1 pound baby carrots
1 pound green beans, trimmed
½ cup reduced sodium soy sauce
⅓ cup honey
2 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon ground black pepper

Skinny Chicken Fajita Soup



1 pound chicken breasts
1 teaspoon olive oil
2 bell peppers, seeded and chopped
1 red onion, peeled and chopped
4 garlic cloves, minced
15 ounce can black beans, drained
15 ounce can fire roasted diced tomatoes
8 cups chicken broth
1 fajita seasoning packet
1/2 cup brown rice, optional
Possible Garnishes: Reduced Fat Cheese Scallions, Avocado

Slow Cooker Chicken Cacciatore





8 chicken thighs, with the bone, skin removed
28 oz can crushed tomatoes (Tuttorosso my favorite!)
1/2 red bell pepper, sliced into strips
1/2 green bell pepper, sliced into strips
1/2 large onion, sliced
1 tsp dried oregano
1 bay leaf
salt and fresh pepper to taste
1/4 cup fresh herbs such as basil or parsley for topping
