Nicole Addison Makes The 'Ultimate' Summer Salad
"If you're looking for the ultimate summer salad, you have to try my crunchy cucumber and strawberry salad," says Nicole at the start of her video.
"I firmly believe that the key to any good salad is chopping up all the ingredients nice and small so that you get a taste of everything in every bite."
To prep for her delicious and nutritious salad, Nicole uses a chopping gadget to finely dice and chop an English cucumber, a large red onion, and a little over two cups of fresh strawberries. Using a knife and cutting board, she finely chops three cups of fresh kale and 1/3 cup of fresh basil. She then adds the greens to a large salad bowl and drizzles some olive oil on them so she can massage it in and tenderize the kale before adding the cucumber, strawberries, and red onion.
To make the salad more decadent, she slices around 250 grams of Halloumi cheese and fries it in a pan with a touch of olive oil and a tablespoon of hot honey to add "the perfect amount of spice and saltiness."
Nicole's dressing for the salad consists of 1/4 cup of olive oil, three tablespoons of balsamic vinegar, and some salt and pepper. After adding the haloumi and dressing to her salad bowl, she tops it off with some feta cheese and chopped walnuts for crunch. Yum!
TikTok Users Say Nicole's Cucumber Salad Is 'Delicious'
After Nicole's video gained some traction on TikTok, users took to the comments section to talk about how it not only looked tasty, but how, for those who took the time to make it, it was a hit. One TikTok user wrote that although they couldn't find Halloumi cheese at their grocery store, they completed the recipe with the other ingredients and "it was delicious."
