A weight loss coach and content creator recently shared her recipe for her Buffalo Chicken Salad Cabbage Cups, which are perfect for the upcoming season and packed with macro-friendly nutrients. Samantha Milton is a social media creator whose content focuses on safe ways to lose weight and healthy eating. After losing 250 pounds despite her PCOS diagnosis and raising three kids, Samantha has been teaching her viewers how to lose weight in an accessible and consistent way.
Her recent video for her chicken salad cups, which are less than 500 calories per serving, is a great example of her simple, healthy lifestyle guidance, and they’re a lot easier to make than you think. Check out how to prepare her tasty meal below.
To prep the chicken salad base for her cabbage cups, the health influencer mixes one can of chicken with three aged white cheddar Laughing Cow cheese wedges, which is used as an alternative to mayonnaise, and “binds” the mixture. She then takes three tablespoons of 0% fat Greek yogurt and adds that to her salad base as well for some extra creaminess.
Samantha adds chopped red and green onions to her salad base for extra flavor and fiber. To make it a ‘buffalo chicken’ salad, she adds two tablespoons of her go-to hot sauce, Texas Pete, for a fiery kick. If you’re not a fan of extra spice or want to try the chicken salad plain, you can omit that step. She adds “lots” of garlic powder, salt, and freshly ground black pepper to season her chicken salad.
“I don’t care what anyone says, canned chicken is chicken salad,” explains Samantha in her video.
“I have to use canned chicken.”
Samantha’s chicken salad mixture is a lot healthier and weight loss-friendlier than some you may see premade in the grocery store. Using Greek yogurt instead of full-fat mayonnaise adds much more protein for fewer calories, and the low-fat cheese wedges are a fun way to incorporate extra flavor and creaminess.
