Happy National Guacamole Day! This might be one of my favorite food holidays…ever. Guacamole is by far one of the best foods on the planet. It reminds me of summertime and laughter because I’m always enjoying guac with my friends or family. Any way you serve guacamole, there’s always a guarantee it will add a little something extra to your meal.
One of my best friends makes the most amazing guacamole I’ve ever had and she’s sharing (thanks, girl!) her recipe! This recipe is packed with flavor and will have you scraping the bowl for every last bit. To make any guacamole, it’s best to use a molcajete, which is a Mexican version of a mortar and pestle traditionally made from basalt stone. Molcajetes grind spices together and are ideal for making salsas and sauces.

Best Guacamole Ever
*Serves two people (one molcajete full)
3 tablespoons of finely chopped cilantro
2 teaspoon onion
Finely chopped jalapeño, to taste (mild: 1/2 teaspoon, medium: 1 teaspoon, spicy: 2 teaspoons)
1 ripe avocado, cubed
2 tablespoons of diced tomatoes, drained
Salt, to taste
1/4 teaspoon fresh-squeezed lime juice
1. Add 2 tablespoons cilantro, 1 teaspoon onion and jalapeño to the molcajete. Grind together with a wooden spoon to form a paste.
2. Once a paste has formed, add the cubed avocado and the remaining tablespoon of cilantro and teaspoon of onion to the molcajete. Add the drained tomatoes, salt and fresh lime juice.
3. Using a wooden spoon, fold the ingredients together for about a minute, leaving it slightly chunky.
Serve with chips and enjoy!
