The new year is coming, and with it, an influx of resolutions surrounding weight loss and creating a healthy lifestyle. While staying on track with eating can be difficult during the holiday season, there are fortunately recipes that are both delicious and nutritious to satisfy your cravings and solidify healthy habits. Below, the best (and easiest!) instant pot recipes to help you lose weight before the new year!
The Kitchen Sink Veggie Bowl
Registered dietitian Lisa R. Young has the perfect instant pot recipe for when you need an anti-inflammatory meal packed with flavor and sure to keep you warm this winter! “This vegan veggie bowl is rich in anti-inflammatory ingredients from red cabbage, oil, and apple cider vinegar which is fermented. The cruciferous veggies and chickpeas are also high in fiber and rich in antioxidants. Ginger and garlic are also anti-inflammatory!”
INGREDIENTS
1 cup wild rice
1 1/2 cups vegetable stock divided
2 tbsp extra-virgin olive oil
1 tbsp sesame oil
2 tbsp apple cider vinegar
2 carrots peeled and sliced
1 tbsp fresh ginger
1 tbsp minced garlic
1 tbsp lemon juice
1/8 tsp salt
2 cups canned chickpeas
1 cup cauliflower chopped
1 cup broccoli florets sliced
4 cups red cabbage thinly sliced
INSTRUCTIONS
Place the rice and 1 cup stock in the inner pot. Press the manual button and set time to 25 minutes. Use a fork to fluff the rice when ready.
To make the dressing: Blend the olive oil, vinegar, ginger, garlic, lemon juice, sesame oil, and salt until the mixture is smooth. Set aside.
Press the Sauté button and add 1/2 cup stock with chickpeas, broccoli, cauliflower, and carrots. Stir and then let them cook for around 3-5 minutes.
To assemble the veggie bowl, spoon 1/4 of the rice and veggie mixture into the four bowls. Add ¼ of the red cabbage, cucumber, and avocado to each bowl. Drizzle each bowl with the dressing.
Butternut Squash Beef Stew
