Arash Prepares His Base For His High-Protein Chicken Salad
One of the best parts about this recipe is how easy it is, as it requires only a few special ingredients and a large amount that could already be in your fridge and pantry.
Arash begins by taking some freshly cooked chicken and chopping it up into small pieces. While he used chicken breasts he seasoned and cooked in the oven himself, he also suggests using rotisserie chicken and shredding it up, if that makes things easier for you. Once his chicken is chopped into small, bite-sized pieces, he adds it to a bowl. Then, he throws in some chopped celery, a classic chicken salad ingredient.
After the celery, he adds about half a finely chopped red onion, as well as a handful of finely chopped fresh cilantro. Then, it's time to make the "easy, high-protein" chipotle-flavored sauce that takes the chicken salad to the next level.
Arash Makes His Chipotle Sauce For The Chicken Salad
In a food processor, Arash adds 1/2 cup Greek yogurt, 1 1/2 tablespoons of mayonnaise,
1–2 finely chopped chipotle peppers in adobo, one tablespoon of adobo sauce, the
juice of 1 lime,
1/2 tablespoon of honey,
1/4 teaspoon garlic powder, 1/4 teaspoon of smoked paprika, and some salt and pepper to taste. Then, he blends all of those flavorful ingredients until he has a smooth, chipotle sauce that you'll want to lick off your fingers.
"This will be on the thicker side," he advises in his caption. "You can add 2 tbsp water or more lime juice as you prefer."
Once the sauce is ready, Arash adds it to his chicken and vegetables and stirs everything until he has a classic chicken salad consistency. That's it! Because he's a keto cook, Arash eats a few scoops of the chipotle chicken salad in lettuce wraps, but if you're keeping carbs in your diet, it can be just as good on some nutritious bread. After Arash shared his recipe in a TikTok video, users sounded off in the comments, writing about how great it looked and how eager they were to try it.
