Samantha Milton Preps The Base For Her High-Protein Lasagna Soup
Lasagna soup is a very trendy recipe right now, as it combines one of the most beloved Italian dishes out there with the comforting texture and experience of eating soup on a chilly, fall or winter day. However, depending on the ingredients and ratio of ingredients used, it can also be relatively high in calories and fattening, with all the pasta and cheese.
However, in classic 'Smaller Sam' fashion, the viral weight loss creator has found a way to keep things a bit more weight loss-friendly in her recipe video, so you can enjoy a bowl of this hearty soup without throwing yourself too far off track.
Samantha begins by finely chopping one large onion and adding it to a soup pot on the stove with a serving of olive oil. Once it's cooked down a bit, she adds one chopped container of mushrooms, before seasoning everything in the pot "heavily" with Italian seasoning. She follows the onion and mushrooms with two big spoonfuls of minced garlic before throwing in two pounds of lean ground beef, letting it break up and cook.
Once her beef has browned and her vegetables start to get tender, Samantha adds in three tablespoons of tomato paste, one 29-ounce can of tomato sauce, and a 29-ounce can of crushed tomatoes, almost creating a meat sauce that would go in a lasagna.

Now that she has all of the classic red sauce components in her soup pot, allowing everything to cook down for a bit, instead of breaking up lasagna sheets and adding them in, which is what traditionally goes in lasagna soup, she adds a box of cellentani protein pasta, followed by two containers of beef bone broth.
"We're just gonna cook that on medium heat until the noodles are done," she explains in her tutorial.
Once her noodles are cooked, Samantha checks the consistency of her soup, noting that she and her family like it on the thicker side, almost like a stew. However, she notes that if her viewers like their soup thinner, they can add extra bone broth or water.
To serve her soup to herself and family, she adds a hearty portion to a bowl and, "instead of" ricotta cheese, adds a scoop of low-fat cottage cheese on top of each bowl, adding some extra protein for fewer calories. Finally, she finishes off each bowl with a sprinkle of Parmesan cheese.
"It's a crowd pleaser," says Samantha at the end of her video. "It's so easy [in] only one pot, and it tastes incredible."
