A health coach, Bethany Dobson, who is also a viral weight loss and wellness content creator on Instagram, shared her recipe for high-protein chocolate muffins that are made with a base of bananas and are perfect for healthy meal prep. These muffins, which can also act as a dessert, make for an excellent high-protein and fiber-filled treat to keep on hand or enjoy on the go. Bethany Creates Her Batter For High-Protein Chocolate Banana Muffins
Muffins are typically not a food you would associate with weight loss and healthy eating, as many regular, store-bought muffins you find in your grocery store's bakery are usually filled with refined sugar and additives that make weight loss a struggle. However, you can easily make high-protein, lower-calorie versions at home.
While some protein muffin recipes can be a bit plain and dry, Bethany boasts about her "best" recipe formula, which she used to create chocolate muffins with a base of bananas that make them extra moist and flavorful. To create her batter, she starts by taking three extra ripe bananas and adding them to a high-power blender. If you don't have one, you could also build the batter in a bowl and use a fork to mash the bananas. Following the fruit, she adds two eggs, around two tablespoons of honey, and a teaspoon of vanilla extract before blending it all up into a smooth mixture.
Then, she adds her dry ingredients, which consist of a cup of oat flour, half a cup of chocolate protein powder, two teaspoons of baking powder, a few tablespoons of cocoa powder, a generous shake of cinnamon, and a pinch of salt, before blending one more time.

Bethany Makes Her Muffins Extra Sweet With A Special Ingredient And Assembles Them
Luckily for all the chocolate lovers out there, the cocoa powder and chocolate protein powder aren't the last of the chocolate-y ingredients the health coach uses. Once she has her mixture in her blender nice and homogenous, she lines a cupcake tray with liners and evenly distributes her batter into them.
Then, she takes a sprinkle of chocolate chips and places them on top of each filled liner, so that every muffin comes out with an even amount of chocolate-y bites. Finally, she puts the muffins into a preheated oven that's around 340 degrees Fahrenheit for around 20 minutes, or until they're baked through. You can test that by sticking a toothpick or knife into the center of each muffin, and if they come out clean, you're good to go. Allow the muffins to fully cool off before eating them, and you're good to go!
If you enjoy your muffins warmed each time you eat them, then Bethany suggests you "pop them in the air fryer for 2-3 mins (or 40 secs in the microwave) and they're as gooey and chocolatey as the day you made them."
