A Health Influencer Shares Her Recipe For 'Healthy' Shrimp Tacos That Are 'Packed With Protein' And 'Perfect' For A Summer Weeknight Meal–They Only Take 20 Minutes To Make!

One of the most refreshing meals you can enjoy during the summertime is a hearty plate of filling and flavorful shrimp tacos. And, you can make them super weight loss friendly, and in a decent amount of time!

A health and wellness content creator, Claire Hodgins, who specialises in posting weight-loss friendly, easy recipes on her TikTok page, recently shared a recipe video for her “healthy shrimp tacos” that look super tasty and are “packed with protein.” A serving of the yummy and easy-to-prepare tacos is less than 500 calories, over 30 grams of protein, and can be made in around 20 minutes. Claire Hodgins Preps Her 'Healthy' Shrimp Tacos In A TikTok Video

In her recipe video on TikTok, Claire says that if you need "an easy weeknight dinner" that "only takes 20 minutes to make," you're going to love her healthy shrimp tacos that capture a summer vibe and can help make you feel like you're on a tropical vacation.

 

She begins prepping her shrimp tacos by taking 20 ounces of peeled and deveined shrimp and coating them with two tablespoons of olive oil and around one tablespoon of taco seasoning. Then, she places the shrimp in a hot skillet and lets them cook through. While they're cooking, she gets together the super yummy and easy crunchy topping and flavorful sauces. Claire takes two cups of cole slaw mix, 1/4 cup of finely chopped cilantro leaves, and tosses them together with the juice of half a squeezed lime, a drizzle of olive oil, and a pinch of salt.

 

Then, it's onto the high-protein sauce, which involves adding half an avocado, ¼ cup Greek yogurt, a teaspoon of minced garlic, ½ tablespoon of lime juice, a tablespoon of water,  ⅓ cup of chopped cilantro leaves, and some salt and pepper into a blender. Then, she blends all of the flavorful ingredients until she has a thick, bright green, avocado-cilantro sauce to add on top.

Claire Assembles Her High-Protein Shrimp Tacos

Once her shrimp are cooked, her slaw mix is prepared, and her avocado sauce is blended, Claire begins to assemble her shrimp tacos on some corn tortillas. If you're on a weight loss journey and looking to eat fewer carbs throughout the day, you can easily swap the corn tortillas for low-carb versions or even place the fillings in a lettuce wrap.

 

Claire seemingly toasts her corn tortillas slightly before adding a small scoop of her slaw mix, a large helping of the cooked shrimp, and a healthy drizzle of the avocado sauce on top. Her recipe makes eight tacos, and she recommends two tacos per serving.

 

In her caption, the health influencer notes that the shrimp tacos are "perfect for a quick weeknight dinner," and since they can be made in under an hour, they're great for anyone who is trying to make quick dinners during this time of year, so you can keep focusing on some summer fun. Each serving is 338 calories and contains 32 grams of protein, so they're also an excellent choice for some weight loss meals. Try them out and enjoy!
