However, there are plenty of ways to make some of your favorite treats from Mexican restaurants more nutrition-friendly and keep you on track for your weight loss journey.

A TikTok content creator and nutrition specialist who has lost 55 lbs, Makayla Thomas, recently shared her quick and easy recipe for a high-protein fajita bowl that requires only a handful of ingredients and can be made super quickly. With a drizzle of queso and some seasoned chicken, it’s a healthy meal that’ll satisfy any Mexican food cravings you’re having. Check out how she makes it below!

How To Make Makayla Thomas’s High-Protein Fajita Bowl

In her video, Makayla stated that this bowl was one of the nutritious meals she’d “eat on repeat” during her 55-lb weight loss, which is a good indicator that it’s not only healthy but also hearty and filling.

To make her “high protein, healthy girl” fajita bowl, Makayla combines a cup of instant rice with a cup of water and a teaspoon of tomato bullion powder in a container. She mixes everything together before putting her rice mixture in the microwave for five minutes and thirty seconds. When it’s done, she’s left with a yummy seasoned rice that makes the base of her bowl.

The nutrition specialist then takes a “mindful serving” of the seasoned rice, which is about half a cup, and adds it to a bowl. She then takes sauteed fajita veggies, consisting of sliced bell peppers and onions, and places them on top of the rice, mentioning that she likes to “hide them” within the bowl. Next, she takes three to four ounces of chicken, covered in flavorful spices, right on top of her rice.

While the bowl may sound fairly basic so far, she adds some yummy finishing touches that add a more indulgent flavor to her fajita-inspired weight-loss meal.

Makayla Adds the Finishing Touches To Her Healthy Fajita Bowl

After the rice, chicken, and fajita veggies are all assembled, Makaya adds a rich topping to her bowl, which is a healthy tablespoon of queso. She drizzles some heated white queso across her bowl, writing that using it is "fine" as it will add some sauce and flavor to the dish without going overboard.

 

Additionally, she sprinkles some shredded Mexican-blend cheese on top of her bowl for some extra flavor and texture before sticking it back in the oven or microwave to let it melt. When her bowl comes out of the oven, it looks super delicious and almost like a "cheat meal," with its gooey cheese topping and drizzle of queso.

 

However, when her recipe tutorial was finished, Makayla wrote that her "healthy girl" fajita bowl is only 285 calories and contains a whopping 30 grams of protein, making it a satiating meal that will keep you full for a more extended period of time.

 

The content creator's followers praised the delicious meal, writing that it's been added to their "list" of recipes to try.
