MaKayla Thomas Creates The Filling For Her Queso Crunchers
This dish is one that the content creator describes as “Rotel dip in cruncher form,” as she uses the slightly spicy, flavorful element of Rotel tomatoes and chilis, which can be found in a can in most grocery stores.
In her video, MaKayla begins by making her filling for the crunchers, by taking a pound of 93% lean ground beef and browning it in a pan. Then, she adds a taco seasoning packet, as well as a few tablespoons of Rotel diced tomatoes and green chilies, a sprinkle of shredded cheese, about 1-2 tablespoons of Greek yogurt, and a tablespoon of canned refried beans, which she says “adds fiber and creaminess.”
She then mixes everything together and cooks it in the pan until the cheese is melted and she has a cohesive filling.
MaKayla Assembles Her Queso Crunchers
Once her filling is ready, MaKayla gets ready to assemble her crunchers by grabbing some zero-carb tortillas.
She lays a tortilla down and spreads a sprinkle of shredded cheese in the center before adding a healthy spoonful of her beef filling on top. She then wraps the tortilla until she creates an enchilada shape, and is left with seven crunchers. Once her crunchers are assembled, she gives them a light spray with a neutral oil before popping them in the air fryer until browned. If you don't have an air fryer, she notes you can also toast them in a skillet until they're a light brown on each side.
Finally, she tops the crunchers with a "mindful drizzle" of warmed queso, not using more than about 1/4th a cup. Each cruncher wrap contains around 205 calories and 21 grams of protein, meaning you could eat two or one alongside a hearty salad and have a super satisfying meal.
"This looks amazing," commented a follower.
