Fluffy, Sweet, High-Protein Pancake Recipe

I’m going to show you guys my all-time favorite breakfast for if you’re craving something sweet and something that’s high in protein,” Clark begins her video. The best part? Her recipe only requires three ingredients: pancake mix, egg whites, Greek yogurt, and sugar-free jam.

Start by grabbing your favorite protein pancake mix. Clark recommends Kodiak pancake mix, which you can find at Costco.Flourish is also a really good brand, but I prefer the taste of Kodiak ones better,” she says. Measure out half a cup of the mix into a mixing bowl.

Next, pour in 1/3 of a cup of egg whites. These will not only add extra protein to your pancakes but also help create that fluffy texture we all love. Then, Clark adds ” just take the tiniest little bit of water” before mixing. Perfect!

Once your batter is mixed to the desired consistency, it’s time to cook up those pancakes. Pour the batter onto a preheated skillet or griddle, flipping them when bubbles start to form on the surface. This recipe will make about three beautiful, fluffy pancakes.

Now for the fun part: toppings! Clark recommends spreading Greek yogurt on each pancake, using a total of 50g. She then suggests layering sugar-free jam on top of the yogurt for that extra burst of sweetness without the added sugar.

Once your pancakes are stacked and topped to perfection, it’s time to dig in. Clark describes her creation as, “So good, so easy, it’s one of my favorite breakfasts when I’m craving something sweet.”
