Salads are always a great option if your goal is to eat healthier and lose weight. Cucumbers are not only hydrating, nourishing and contain antioxidants all on their own, but when added to a nutrient-rich salad, they provide a myriad of health benefits. Before getting into a delicious and simple cucumber recipe that we found, we checked in with Lisa Richards— registered nutritionist and creator of The Candida Diet— for tips on making the perfect salad to promote healthy weight loss.

“Creating a filling and satisfying salad is a great way to ensure you’re actually full after eating, which can prevent overeating or binging at other points in the day,” she explains. Richards notes that a filling salad doesn’t have to have lots of unhealthy ingredients to get the fullness you’re wanting to accomplish.

“In fact, satiety is based largely on activating the stretch receptors and nutrient receptors in our stomach,” she notes. By adding a variety of nutrient-rich vegetables, she says, we can accomplish this, and ensure we are full, satisfied, and well-nourished. “Some of my favorite salad toppings include cucumbers,” she adds, and with that said, let’s dive into a delicious cucumber salad recipe:

Simple Cucumber Salad

This recipe we found while researching is perfect for many diets and eaters of various needs, as it is vegan, gluten free, and also suitable for Paleo diets. It is not made with high-fat mayonnaise or sour cream, which can also help prevent weight gain and unnecessary calories. With just three main ingredients when it comes to produce needed for the salad, and then only two for the dressing, it's not only simple to make, but also incredibly healthy, filling and energy-providing!

 

Ingredients:

 

English cucumbers (large and seedless), red onion (small), pink Himalayan salt


For dressing: rice wine vinegar, dried dill (optional), olive oil
