A Weight Loss Influencer Who Lost 250 Pounds Shares Her Viral Low-Calorie 'Dumpling Bake': 'It's So Good'

There are so many weight loss recipes going viral this time of year, and if you’re getting a little tired of healthy soup and stew recipes, you’ll want to give this one a try.

So many people love to eat Asian food with noodles, rice, flavorful meat, vegetables, and more. However, some Asian-inspired dishes, especially those that come from takeout or fast food restaurants, can hinder weight loss. Still, there are ways to enjoy those iconic flavors and meals while staying on track. Samantha Milton, a viral weight loss content creator who lost over 250 pounds, recently shared her viral recipe for a cozy, flavorful “dumpling bake” that’s “low calorie” and looks like a fun weeknight dinner idea. Samantha Preps The Base For Her Dumpling Bake

These days, many people are fans of cooking and meal-prepping ‘bakes,’ or large meals constructed in pans that can last a few nights or feed the entire family, almost like a casserole. For this dumpling bake, the influencer starts with a square-shaped roasting pan and builds a sauce for the base of the bake.

She adds one can of light coconut milk, a few tablespoons of sriracha hot sauce, three tablespoons of soy sauce, three teaspoons of red curry paste, three teaspoons of ginger paste, and a tablespoon of minced garlic to the bottom of the pan before giving everything a good mix.

Then, she adds the main event, which is an entire bag of frozen mini chicken and vegetable dumplings. Samantha specifically uses the Bibigo mini wontons, but you can use whatever brand of frozen dumpling you like. She spreads the dumplings evenly in her pan on top of her sauce base before popping her tray into a 425-degree Fahrenheit oven until the dumplings are cooked and heated through.

Samantha Cooks Her High-Protein Rice & Assembles Her Portions

While her dumplings are cooking, the weight loss creator gets to work on her rice and vegetables, which are eaten along with the dumplings.

 

For her rice, she cooks one cup of rice in two cups of bone broth and cooks it normally. While that's going on, she sautes some chopped shiitake mushrooms in olive oil, and cooks down some bok choy, cooking the veggies in a pan until they're soft and cooked through.

 

Once her rice is fully cooked, she adds it to a bowl and mixes it with an ingredient that you might not be expecting - she adds a serving of coconut cream flavored protein powder, and mixes it into the steamy, cooked rice until it dissolves. This adds around 30 extra grams of protein to the dish, but if it doesn't sound appetizing to you, you can omit it.

 

Now that her rice, veggies, and dumplings are finished, she plates up a portion of each element altogether in one pile and enjoys it like a stir-fry.
